Powercat Paint Run

I’m embarrassed to say I have not been eating healthy lately! It was Daniel’s birthday on the 12th and his best friend’s mom baked him the most amazing chocolate cherry cake! I probably ate a good third or half of it…. whoops.

Then my parents bought him cupcakes and a mini german chocolate cake. I also had more than my fair share of those.

And then I saw oatmeal cookies for 99 cents at the store! It came with 10 and they’re 90 calories each. So of course I’ve eaten 6 of them in the past few days.

I have a problem.

But I ran the Powercat Paint Run that I mentioned a couple weeks ago. It was me, Daniel, his friends Robert, Mercedes, and Kory, and my classmates Alyssa, Trista, and Will. We all ended up splitting up right at the beginning. Some how I kept track of Daniel and Robert in the chaos. They were nice enough to keep a slow pace with me.

Here’s Daniel and me pre-race.

color run

Here is us with Robert at the water station. We had run through 2 color stations by then. Blue and Green. Clearly I had more blue powder thrown at me. I also had a little purple thanks to Trista who bought extra color to carry around and throw at people.

color run!

Here’s us after the race. In all our colorful glory. Notice Daniel’s blue face. Apparently people like to throw color at your face. I was lucky enough to avoid that. But I did have some blue stuck in my ears for a couple days after…

end of color run

I did have to learn my lesson though and keep my mouth shut as we ran through the color stations. Otherwise you end up with blue teeth… or whatever color it happens to be that time. But I learned pretty quick after the first station. Let me just say–it’s hard to run and hold your breath!

Regardless, the race was so much fun! I had a lot of pride at the end when some lady in a pink tutu slowed down and I decided to sprint past her to the finish. Woot! Finished in 32.05! Not bad for only running a handful of times before it. It ended up being really close to a 10min/mile pace.

Here’s the MBA gang post-run

MBA post-race color run

Alyssa, Trista, Will, Me

Will actually ended up first in his age group! I’m pretty sure his time was less than 25 minutes. He’s fast!

I was 21st in my age group 😛

Since then, I haven’t ran at all. But surprisingly Daniel has gone a few times! He’ll go with his friends, but not me =( Haha oh well. I’m just proud of him for making the effort finally!

I don’t have much of an excuse for not going except that I’ve been busy with projects, tests, and essays (Economic essays–which are the worst kind if you didn’t already know).

I did however get a good workout in Saturday from helping my sister and her hubby move into a new apartment. They needed more space so they found a 2-bedroom townhouse a block away from their previous one bedroom apartment. They lived on the 3rd floor… and for some reason I forgot to change into my tennis shoes so I ended up wearing flip flops the whole time.

Needless, my calves have just finally recovered as of today! Soreness and knots galore. My foam roller helped a bit and I made Daniel massage them for me too. I also tried to stretch them really well.

The men carried most of the heavy furniture so Sarah and I didn’t really have to do much except transfer over clothes and little things to the new place. But all of those stairs are what got me.

At least we got to meet this cutie:

pet pig!

I don’t know his name but that’s his owner’s feet behind him in case your were wondering. He’s 3 years old (the pig, that is). They were going for a walk by the new place and we just had to say hello. Apparently he’s well behaved and very attached to his owner so he doesn’t need a leash.

He enjoyed nibbling on the grass.

pig pig

After some pig petting they went on their way and we continued the moving process. Since the two locations were so close we finished in less than 8 hours.

My Fitbit said I went over 11,000 steps that day!

After the move we went to Target and bought ice cream. So, you know, you win some you lose some. I think it all balanced out in the end.

I’ll be back with more updates later! Just for a hint– I met Aziz Ansari! (Just kidding–but I was only like 100ish feet away from him at his show, so that’s good enough)

The Opposite of Meal Planning & Upcoming Race!

Happy Thursday! Here’s a two-for-one update!

Tuesday:

Breakfast, I took a banana to my first class and then snacked on some cashews in my second class for the morning.

For lunch I enjoyed my left over Chipotle veggie bowl.

After my afternoon class, I was hungry and snacked on a brownie. To get some of the sweets out of the house I took some brownies and cookies over to my mom. But don’t worry, I saved a few to enjoy for myself still!

Then I FINALLY went running again! 3 miles! Have I mentioned I have a race Saturday I need to train for?

It’s called the Powercat Paint Run. It’s basically a color run but it’s put on by the Manhattan Running Company to benefit the Ronald McDonald Houses in Topeka and Wichita, KS. It’s a 5k so I think I’ll be able to run it the whole time. The course looks pretty flat and I was able to run those three miles Tuesday without stopping! I think my time was a little over 30 minutes so that’s almost a 10-minute mile. I’m pretty slow nowadays.

I’m super pumped for this race though. My friends from class mentioned it so we formed two teams that signed up for it. If you have a 5 person team you can get an entry discount. It’ll be fun to hang out with them some more outside of class. Also, it’s Daniel’s birthday this Saturday so I’m making him and some of his friends that are coming into town race with us.

After my run I was starving and Daniel was getting home from work so we went to Panera. I had a little money left on a gift card from my birthday so I decided I needed to use it up. I always get the Pick-2 and this time chose the Napa Almond Chicken Salad Sandwich and the Thai Chicken salad. I ended up just eating the salad–it was surprisingly really filling–and saved the sandwich for my lunch wednesday.

Thai Chicken salad

So that brings me to

Wednesday!

I took a fruit smoothie to work for breakfast and then had my leftover Panera for lunch. With a brownie for dessert =P

napa almond chicken salad sandwich

We really suck at meal planning and pizza sounded good so I bought a frozen one from the grocery store.

organic roasted vegetable pizza

It’s organic! I like that I can understand everything on the ingredient list. There was nothing you wouldn’t expect: crust, cheese, sauce, and veggies. It was tasty and filling. I ate more than half of it and left the rest for Daniel since he gets home later than me.

I didn’t get around to exercising yesterday but I plan to get one more run in today before the race saturday. Daniel went running this morning while I was in class and did 2 miles in 18 minutes! He said his first mile was about 8 minutes and then he slowed it down. I hate that he can run that fast without even training. Jerk.

Anyone have a race coming up?

Cookies = My Kryptonite

I’m a little behind on my blogging!

Saturday meals:

Daniel and I went to the K-State Open House, an event where each college showcases their programs to the public. My main stop was the Grain Science Department, where I pretty much lived during my undergrad.  The Bakery Science Club always holds a huge bake sale so of course I had to hit that up! I hadn’t had their cookies in almost a year! I bought Monster cookies and S’mores cookies, as well as some brownies… delicious!

And we took advantage of the sweet photo-op. And yes, I am holding a bag full of goodies.

grain science photo-op slice of bread

So that basically means I needed to eat two cookies right off the bat. We went there in the morning and didn’t have breakfast beforehand, so why not cookies?

Then we met up with some friends at the local Hibatchi Hut. It’s bean around since 1959 but resently moved to a new location and reopened. Same great menu, nicer building! It was pretty swanky. Unfortunately, I temporarily lost my phone while we were there so I didn’t get any photos. I ordered the veggie burger with tater tots. It was good but a lot so I saved half of it for my dinner later.

After lunch I checked the car for my phone but couldn’t find it. We were giving one of our friends a ride home so before we dropped her off we stopped at our apartment to give her some of the cookies we had bought earlier and I checked for my phone real quick, thinking I had left it there. Still couldn’t find it so when I come back to the car I have my friend call it. We hear the vibrations of it ringing but it’s no where in sight. I search under the seat, between the door, everywhere! I tell them that it feels like my phone is inside the car’s door because it is vibrating. I get out of the car, close the door, open the door, look around puzzled some more. Close the door. Then–what’s that sitting on the side view mirror?!? My phone!!!

How did it get there?! I have no idea. But it some how managed to ride that way on the mirror without falling off, all the way back to our apartment. It’s a miracle!

My friend offered the suggestion that it probably fell off my lap when I was getting out of the car when we arrived for lunch and someone found it on the ground right next to the car and placed it on the mirror, thinking I would see it. Thank you kind stranger! I’m too oblivious to my surroundings to notice my phone sitting on the mirror within my line of sight. But I’m glad to have it back–and without a scratch!

So clearly, after all that excitement I needed to eat another cookie and a brownie.

brownie

For dinner I had my leftovers.

Later that night we had a new 21-year-old visiting us, so a bunch of friends went out to celebrate. I ended up drinking 2 mang-o-ritas, one shot, and one beer. This one bar has a shot-ski, a ski that holds four shots! Everyone has to take their shot together by lifting the ski up in a group effort.

Me, Daniel, Corey, Gabe the birthday boy

And then…. I convinced everyone we needed Burger King. Yes, it was my fault! I enjoyed 3 chicken strips and some fries. Why must it always be on the way home?! That’s it, no more drinking! I always want Burger King! But we all know I’m lying. I mean, Daniel’s birthday is this Saturday so of course I’ll celebrate. Somebody give me the strength to resist the BK please!

Sunday

I ate a little better on Sunday. We needed to grocery shop so we bought breakfast/lunch at the store in the form of soup and sushi! I chose the vegetable soup and Daniel and I split a pack of shrimp/crab sushi.

soup and sushi

Then late in the afternoon I needed two cookies. This is why I rarely buy sweets. If it’s in the house, I will destroy it until it’s all gone!

For dinner we tried to keep it healthy with spaghetti squash, veggies, and potatoes.

spaghetti squash

Then I snacked on cashews and went to bed. No working out again. Whoops.

Monday

Monday started with a fruit smoothie for breakfast–a ton of strawberries, a banana, and lots of coconut milk! It was a creamy dream.

For lunch, I packed left over spaghetti squash. And for a snack I ate some raw green pepper strips and hummus…. with a cookie for dessert! What’s my cookie count up to now? I don’t want to know…

Then I had some brownie in the evening and some cashews before my night class. That counts a complex carb and protein right? Just kidding!

For dinner, I chose to eat Chipotle even though we just went grocery shopping. We really need to meal plan. I ate half a veggie bowl and saved the rest.

So now we’re all caught up! And I failed at working out. But I have better news for tomorrow! For now, it’s bed time!

Jamaican Me Hungry for The Little Grill

Hey mon! We enjoyed a tasty feast at di local Jamaican restaurant last night!

It’s located a little ways outside of Manhattan near the lake. They have really expanded since I last went there–I first went there when I was younger with my family and they only had 10 tables! Daniel and I decided to explore our way to it and were pleasantly surprised by the awesome island atmosphere and live music! The owner, Kenrick, often plays his guitar there to entertain the guests and we were lucky enough to get to see him (he has an amazing singing voice too). He even came up to our table to ask us how we were doing. It’s an awesome restaurant so if you’re ever in the area, go there! As their website says “Everything little thing will be alright at The Little Grill.” =) I think it’s my new fave.

As for the meal, I couldn’t decided on an entree so we ordered two appetizers and split an entree.

The popcorn coconut shrimp sounded yummy so I chose that and Daniel chose the Buffalo Soldier Chicken Wings with the spicy jerk BBQ sauce. Both were delicious!

popcorn coconut shrimp and buffalo chicken wings

For our main dish we ordered the Gumbo. It doesn’t look like much but they gave us pretty big bowls and we shared it. It was filling, hence the food coma I was in last night.

Jamaican style gumbo

But, let’s rewind to my morning. I had two strawberry muffins for breakfast. Then I chowed down on some pseudo stir fry. See, we had rice, so I chopped up some squash and cucumber to put on top and drizzled some soy sauce and lemon juice over it. Then at work when it was time to eat, I nuked in the microwave for a minute. Ta-da!

microwave stir fry

It wasn’t anything special, but it got the job done.

For an afternoon snack I had a medium iced soy Raspberry White Chocolate Mocha. It’s a mouthful to say, but it’s oh so good! There’s a little drive-thru coffee hut called the Brew Crew right next to my work that has awesome prices and THE BEST espresso! It was only $3.60 for that thing. Be jealous. I think it’s going to become my new friday tradition.

So that was my day. I didn’t work out =( Once I got home from work I enjoyed my latte and did some major research on personal finances. I may possibly have an opportunity to learn more about financial planning and counseling so I wanted to do a little research– but then I just got sucked in.

If you’re looking to budget, invest, get a loan, credit card, pay off debt, etc. then I HIGHLY recommend cashcourse.org. There is a lot of valuable information on there. It has financial tools, advice on money and relationships, work and earnings, and the basics. I learned more about how health insurance works and that it should be your second priority after salary to negotiate when starting a new job. Sometimes insurance plans can cost thousands a year so it’s good to know if your company will cover partial or all of it. Who knew! I’m still a kid reaping the benefits of being under 26 and still under my parents’ coverage. Livin’ the dream life yo’! Haha. But for reals, can’t wait until I start that big girl job *sigh* someday.

Anywho, that was my Friday! How was yours? Are you financially savvy? Do you have a specific gourmet coffee drink you like to order?

Food Coma…

Ok, I think I’m just getting old and senile because I’m having a hard time remembering everything I eat. I should probably just write it down instead of trying to remember it the next day.

Breakfast: I started out with 3 strawberry muffins that I made the night before and I enjoyed them while in class. I’ve started to not eat breakfast until after I leave the house. I’m not a morning person so it’s hard to wake up early enough to give myself enough time to eat breakfast before I leave. That’s why I’ve been having a lot of smoothies for breakfast lately. And now muffins.

Lunch: Leftover breaded tilapia, rice, and asparagus!

breaded tilapia

In the afternoon I was craving something sweet and I’m pretty sure I ate another muffin, and some marshmallows with semi-sweet chocolate chips.

It took me a while to get into the mood of working out and even when I did it didn’t go very well. I just didn’t have the energy or the motivation.  I followed more Blogilates videos but they were challenging and I didn’t make it to the last one for the day. The day focused on Arms & Abs.

Dinner: Daniel and I enjoyed 50 cent tacos again at the local bar & grill, Porter’s. I don’t think I’ve had them since the fall semester. They were delicious! They are simple beef tacos with lettuce, cheese, and salsa. I also ordered a small cup of queso but shared it with Daniel. It’s only about 2 oz probably.

I think that’s all I ate? Probably more strawberry muffins. Those things are addictive!

I’m in a food coma right now and it’s late on a Friday night so it’s time to snuggle with my man and go to bed. He’s watching a documentary on Bobby Fischer right now. Nerd.

Have a good night!

What I Ate Wednesday, Told On Thursday

I can’t believe it’s already Thursday. This week is flying by! I don’t really have big plans for the weekend but I’m looking forward to relaxing. And maybe doing some homework/studying. And exercising! Ok, it won’t be that relaxing, but I won’t have any obligations =)

Yesterday went… okay for me. I didn’t get around to exercising though. I got so lazy! Here’s what I ate:

Breakfast: I was running late for work (shocker) so I stopped by the Starbucks drive-thru for a quick meal. I actually resisted getting a chai latte, but I ordered the Spinach Roasted Tomato, Feta & Egg White Wrap. It’s so tasty and filling. I can’t get enough of them.

Lunch: I packed some strawberries, cantaloupe, and leftover veggie pasta for my lunch. It didn’t fill me up very much though since there wasn’t a lot of pasta left.

As soon as I got home I snacked on a rice cake with cinnamon flavored laughing cow cheese wedge. And then I had one of these:

mini lemon cup

Man, I just love my photography. HA! So what is it? Well, it’s a Mini Lemon Cup from Savory Lotus! Check out the recipe and more appealing photos on her site! They’re vegan, and sooooo yummy! It calls for macadamia butter but I made mine with almond butter and I think they turned out pretty good (just a little darker color). I’ve been snacking on them for over a month (they freeze really well). Here’s another photo to give you a better idea.

Dinner: We got fancy with some Panko breaded tilapia fillets, rice, and roasted asparagus in coconut oil. Oh yeah.

breaded tilapia over rice topped with asapargus

I added a few drops of lemon juice to the fish and little soy sauce to the rice. I had forgotten how much I love fish! I’ve been having it a lot lately.

Dessert: I was craving a baked good and we have a lot of strawberries right now so I decided to make strawberry muffins. I used this recipe from allrecipes.com. They were really easy to make. The only thing I changed was using almond milk in place of cow’s milk. We have canola oil we need to get rid of so I used that, but if you have coconut oil you should try that instead. Just warm it in the microwave for a few seconds before mixing and it should be good to go.

In the evening we went to watch a local version of the Last Comic Standing contest. We got there halfway through but there were some really funny guys, and ladies! Only one female made it through the elimination though. I may go back next week to see more of round 1. There were so many comedians that they had to split the first round into two different nights. Most of the jokes were pretty hilarious and highly inappropriate–aren’t those the best kind?

The show was held at a nearby bar that Daniel and I can easily walk to but some friends picked us up on their way. Once the show was over they wanted to stay out later than us so we walked back. To get back home we always have to walk by Burger King — and I was craving it hardcore. Luckily Daniel was there to talk me out of it. Instead, when we got home I had a bowl of rice crispy cereal and coconut milk. Not as satisfying but it took away the hunger.

Anybody get some good workouts in? Or see an awesome comedy show? Speaking of comedy, Aziz Ansari is coming to Kansas State University April 23rd and I am soooo there! Just gotta buy them tickets!

Successful Day!

It’s a very dreary day here in Kansas. The bright side (haha), is that the rain/mist seems to have eliminated the allergens in the air temporarily. I just now sneezed for the first time today at 4:30! That’s a record.

Yesterday was pretty successful overall for meals and exercise. I am super sore today to prove it.

What I ate:

Breakfast: I was running late for class so I made a fruit smoothie to-go: banana, strawberries, blackberries, spinach, almond milk, and orange juice.

Lunch: I made a tasty spinach salad with cucumber slices, strawberries, almond slices, feta, and raspberry vinaigrette. Daniel made me two scrambled eggs as well for a little protein.

spinach and fruit salad

Later before he went to work he sweetly drove me to Starbucks so I could get a Grande Soy Iced Chai Latte and he could get his much needed Americano. Apparently the non-drowsy allergy medication I gave him was making him rather drowsy.

For my workout I tried to mix it up a bit. I found suggestions online for Blogilates so I decided to give her videos ago. She has a youtube channel and blog with some really great workouts! I did this video first:

At the end she recommends other videos to go along with it. I guess it’s part of her monthly schedule she has set up on her site. So I followed along with all of them except the last one for the day. My butt was on fire and I sure as hell wasn’t doing another butt video especially when it’s called “Super Butt Workout!” They are definitely some great videos though. Here’s the page with the videos I followed from Blogilates.

After that I decided to get my run on. I went 2.5 miles again. This time I decided to track it with Endomondo on my phone but I started it a little before I started running and stopped it during my walking/cool down so it doesn’t quite show my full distance. At the end of my runs I like to pick up the pace, as you can see by my max speed. 5:38 woot woot!

endomondo running recap

After my run, I refueled with a chocolate protein shake from Shakeology by blending the protein powder with a banana and some almond milk.

Dinner: I made a stir fry with white rice, cucumber, carrots, yellow squash, onion, and spinach. For flavor I added soy and teriyaki sauce. You can find my super easy stir fry recipe here.

stir fry

So I feel pretty accomplished about yesterday! Hopefully I can make good decisions today too. Though I may cut out running since it’s chilly and misting still. We’ll see!

April Fools’ Day!

Happy Tuesday ya’ll! Even though I slept horrible last night — anybody else with awful allergies? — I am in a chipper mood with my soy iced chai latte. What is it about Starbucks that makes a so-so day turn into something cheerful? *holds chai while whispering “my precious”*

So let’s see how well I ate yesterday:

Breakfast: I started off the day with some Chobani greek yogurt. These flip ones are the best! I love the add-ins. I highly recommend the coconut flavored one too. It has almond slices and chocolate pieces to mix in =)

Snack time! Chobani greek yogurt Lunch: I ate my left over salmon and pineapple from the previous day’s dinner. Since it wasn’t very much I paired it with some more of the veggie pasta and cheese-less alfredo sauce.

As a pseudo snack/dinner, Daniel brought home a small portion of potato soup and some saltine crackers before I headed to my 5:30 night class.

Dinner: After my class got out at 8, I’m pretty sure I ate more pasta… can’t remember… but I know I’m always hungry afterwards so I’m sure I ate something. I’m blaming the allergies for fogging my memory.

And since I haven’t bought any dark chocolate Toblerone yet, I snacked on a handful of marshmallows and about a teaspoon of semi-sweet chocolate chips. They pair up quite nicely! I enjoyed them while watching the finale of How I Met Your Mother. OMG!!!! Who else was shocked by the ending?! That was not how I pictured it but I kind of liked it. I’m sad it’s over now. Time to find a new tv to obsess about. Any suggestions?

And since my Mondays are jam packed with work and school, I’ve decided Monday shall be my rest day.

So, anyone pulling sweet pranks today for April Fools’ Day? Apparently Obama resigned! 😛
