Robert’s Home-cooked Birthday Meal

Yesterday was one of Daniel’s good friend’s Birthday.  Robert turned 23!  In celebration, he invited us over for dinner. We got spoil on his birthday! haha!  He made a fabulous Italian dinner.  First, he started off with a tasty salad.  It was mixed greens, grape tomatoes, chicken, and feta.  He topped it with a homemade vinaigrette simply a mix of olive oil and balsamic vinegar.  Clever! (Or maybe I just didn’t know how balsamic vinaigrette was made?). Oh, and those grape tomatoes were topped with garlic powder, salt, pepper, and oil, then roasted in the oven for 25 minutes at about 400 degrees F. Mmm-mmm good!


This is before I shredded up my chicken so it looks a little funny, but trust me, this salad was so good!

For dinner he made angel hair spaghetti with a home-made red sauce.  It was almost a little sweeter than typical sauce you would get at the store but still traditional.  He did a fabulous job!


I was so full after dinner. I filled up on some bread as well with more of the oil/balsamic vinegar mix. It was addicting!

If I had avoided those cookies, I would have been within my calories.  Robert had made these cookies earlier and I couldn’t resist. I know, I KNOW! I was suppose to not have any sweets this week. But you don’t understand, they were mint chocolate chip cookies! I mean, how can you say no?!? I’m a failure =(  And I didn’t have just one, but another half!

But I ran yesterday too!  To break in our new shoes, Daniel and I ran around the indoor track at the K-State Rec Center.  We don’t want to run outside in them yet until we’re for sure they’re the right shoes for us (since we can’t return them if we wear them outside).  So far so good but we want another run just to make sure, so we’ll be at the rec again tonight.  It felt so much easier running around that track in air conditioning than outside in the humidity and heat.  Three miles was a breeze!  We would have kept going but it was getting late.

Tonight, we’re having Daniel’s cousins over for dinner.  We’re making a coconut salmon!  Hopefully it turns out good!

    • I get them from Einstein’s Bagels (Daniel makes them for me), but I bet you could make your own version! It’s always the wheat bagel thins, lettuce or spinach, cucumbers, onions, tomatoes, avocado, and either some pesto or red pepper sauce. It’s so good! Adding some cream cheese on it is good too. He always makes it a little different, but those are the staples.
