Day Twelve ~ Vegan Challenge

Day 12 For breakfast I had a tasty bowl of oatmeal topped with pecans, dried cranberries, and a little bit of shredded coconut. Absolutely delightful. Lunch was made up of the leftover White Bean Salad with rice and balsamic vinaigrette. I also had a little bit of the Mediterranean Baked Tofu left from Day Eight. Still just as tasty!
