2017 new year, better you

I can’t believe it’s almost 2017! What are you doing to ring in the new year? We have some wonderful friends coming in to town to help us celebrate! We plan to go to a local Bar & Grill that has a great elevated patio that looks down upon downtown Denver so we can enjoy the fireworks without all the frenzy (we’re old like that, okay?).

Among the celebrations I have been thinking of my new year’s resolutions. Do you make yearly resolutions? In that past I have, but they end up being vague and not very structured. They are usually something along the lines of “lose weight” or “get organize” without any solid plan of the how to accomplish them. And you might guess how that fared for me—yeah, it didn’t.

So this year I’m taking action and getting specific with the goal and how to achieve it. Yeah, 2017, I ain’t messin’ around this time!

2017 New Year’s Resolutions

Instead of “lose weight” here are my specific health goals for the new year:

1. Reduce my body fat by 3%

I plan to achieve this by consistently working out–never having more than 4 consecutive days between a workout. 3% seemed like a reasonable amount of fat to lose in one year (hopefully it’s more but I want it to be challenging and achievable). And I feel like body fat is a good way to measure my physical achievements rather than weight since muscle weighs more than fat and can be misleading on the scale.

2. Follow the Nutritarian Women’s Health Study diet

I plan to assess my diet and make the improvements where needed to reduce my intake of processed foods and replace them with a whole food alternative. If you haven’t signed up for the study yet, want more information on it, or want a free book click this link! I will be posting how I am making these changes and what I am doing to make them sustainable for long term success.

3. Stretch daily for AT LEAST 10 minutes

Everyone can find the time to do 10 minutes of something and this goal has been something I’ve been meaning to do for a while. I want to regain my flexibility and strength. I hope to get in my 10+ minutes of stretching after my workouts but on rest days I will most likely stretch right before bed–it’s a nice nighttime relaxer!

4. Run six consecutive miles

I haven’t ran this far in…like ever. I’ve hiked/walked this far before but never ran. Now that I have joined a gym (woot woot) I plan to run on the treadmill 2-3 times a week and up my mileage slowly. Yesterday I ran one mile at a 6MPH pace or a 10-minute mile and it was challenging. (Can I still use the “altitude” excuse after living here 1.5 years?) Each time I run I want to add on an additional 0.25-0.5 mile. That puts me on track to running 6 miles at the very latest in 20 weeks or mid-May. Challenge accepted!

My health goals are much more extensive than the rest of my goals. I am very passionate about my health and want to be an example for others on this lifestyle. Plus, if you don’t take care of yourself it is harder to achieve in other areas of life.

So the rest of my resolutions are actually very simple.

5. Minimize

Less is More

Yep, that’s it! I feel bogged down by all of the extra things and objects taking up space in my home. I am a borderline hoarder. Okay, not that extreme, but I struggle with letting things go. I make excuses for keeping things I don’t need and don’t use anymore but *might* in the future. But that future rarely comes and all of this clutter raises my stress levels. To start minimizing I have committed to getting rid of 10 things every month! I plan to take you all on the ride with me with monthly updates to keep me accountable and to show you what sort of things have been cluttering up my life that could be cluttering up yours as well.

So that’s it for my resolutions! Hopefully these inspire you to make your own new year resolutions BUT I do have a recommendation for those of you who are wanting to “eat better” but need a bit of motivation or accountability.

My Challenge to You

Every year, a non-profit organization sponsors an online event called Veganuary. It’s all about challenging people to go vegan for the month of January. They provide a free cookbook, plus a bunch of recipes directly on their website and a guide for eating out. Powercat Paint Run

I’m embarrassed to say I have not been eating healthy lately! It was Daniel’s birthday on the 12th and his best friend’s mom baked him the most amazing chocolate cherry cake! I probably ate a good third or half of it…. whoops.

Then my parents bought him cupcakes and a mini german chocolate cake. I also had more than my fair share of those.

And then I saw oatmeal cookies for 99 cents at the store! It came with 10 and they’re 90 calories each. So of course I’ve eaten 6 of them in the past few days.

I have a problem.

But I ran the Powercat Paint Run that I mentioned a couple weeks ago. It was me, Daniel, his friends Robert, Mercedes, and Kory, and my classmates Alyssa, Trista, and Will. We all ended up splitting up right at the beginning. Some how I kept track of Daniel and Robert in the chaos. They were nice enough to keep a slow pace with me.

Here is us with Robert at the water station. We had run through 2 color stations by then. Blue and Green. Clearly I had more blue powder thrown at me. I also had a little purple thanks to Trista who bought extra color to carry around and throw at people.

I did have to learn my lesson though and keep my mouth shut as we ran through the color stations. Otherwise you end up with blue teeth… or whatever color it happens to be that time. But I learned pretty quick after the first station. Let me just say–it’s hard to run and hold your breath!

Regardless, the race was so much fun! I had a lot of pride at the end when some lady in a pink tutu slowed down and I decided to sprint past her to the finish. Woot! Finished in 32.05! Not bad for only running a handful of times before it. It ended up being really close to a 10min/mile pace.

Will actually ended up first in his age group! I’m pretty sure his time was less than 25 minutes. He’s fast!

Since then, I haven’t ran at all. But surprisingly Daniel has gone a few times! He’ll go with his friends, but not me =( Haha oh well. I’m just proud of him for making the effort finally!

I don’t have much of an excuse for not going except that I’ve been busy with projects, tests, and essays (Economic essays–which are the worst kind if you didn’t already know).

I did however get a good workout in Saturday from helping my sister and her hubby move into a new apartment. They needed more space so they found a 2-bedroom townhouse a block away from their previous one bedroom apartment. They lived on the 3rd floor… and for some reason I forgot to change into my tennis shoes so I ended up wearing flip flops the whole time.

Needless, my calves have just finally recovered as of today! Soreness and knots galore. My foam roller helped a bit and I made Daniel massage them for me too. I also tried to stretch them really well.

The men carried most of the heavy furniture so Sarah and I didn’t really have to do much except transfer over clothes and little things to the new place. But all of those stairs are what got me.

I don’t know his name but that’s his owner’s feet behind him in case your were wondering. He’s 3 years old (the pig, that is). They were going for a walk by the new place and we just had to say hello. Apparently he’s well behaved and very attached to his owner so he doesn’t need a leash.

After some pig petting they went on their way and we continued the moving process. Since the two locations were so close we finished in less than 8 hours.

My Fitbit said I went over 11,000 steps that day!

After the move we went to Target and bought ice cream. So, you know, you win some you lose some. I think it all balanced out in the end.

The Opposite of Meal Planning & Upcoming Race!

Happy Thursday! Here’s a two-for-one update!

Tuesday:

Breakfast, I took a banana to my first class and then snacked on some cashews in my second class for the morning.

For lunch I enjoyed my left over Chipotle veggie bowl.

After my afternoon class, I was hungry and snacked on a brownie. To get some of the sweets out of the house I took some brownies and cookies over to my mom. But don’t worry, I saved a few to enjoy for myself still!

Then I FINALLY went running again! 3 miles! Have I mentioned I have a race Saturday I need to train for?

It’s called the Powercat Paint Run. It’s basically a color run but it’s put on by the Manhattan Running Company to benefit the Ronald McDonald Houses in Topeka and Wichita, KS. It’s a 5k so I think I’ll be able to run it the whole time. The course looks pretty flat and I was able to run those three miles Tuesday without stopping! I think my time was a little over 30 minutes so that’s almost a 10-minute mile. I’m pretty slow nowadays.

I’m super pumped for this race though. My friends from class mentioned it so we formed two teams that signed up for it. If you have a 5 person team you can get an entry discount. It’ll be fun to hang out with them some more outside of class. Also, it’s Daniel’s birthday this Saturday so I’m making him and some of his friends that are coming into town race with us.

After my run I was starving and Daniel was getting home from work so we went to Panera. I had a little money left on a gift card from my birthday so I decided I needed to use it up. I always get the Pick-2 and this time chose the Napa Almond Chicken Salad Sandwich and the Thai Chicken salad. I ended up just eating the salad–it was surprisingly really filling–and saved the sandwich for my lunch wednesday.

Wednesday!

I took a fruit smoothie to work for breakfast and then had my leftover Panera for lunch. With a brownie for dessert =P

We really suck at meal planning and pizza sounded good so I bought a frozen one from the grocery store.

It’s organic! I like that I can understand everything on the ingredient list. There was nothing you wouldn’t expect: crust, cheese, sauce, and veggies. It was tasty and filling. I ate more than half of it and left the rest for Daniel since he gets home later than me.

I didn’t get around to exercising yesterday but I plan to get one more run in today before the race saturday. Daniel went running this morning while I was in class and did 2 miles in 18 minutes! He said his first mile was about 8 minutes and then he slowed it down. I hate that he can run that fast without even training. Jerk.

Successful Day!

It’s a very dreary day here in Kansas. The bright side (haha), is that the rain/mist seems to have eliminated the allergens in the air temporarily. I just now sneezed for the first time today at 4:30! That’s a record.

Yesterday was pretty successful overall for meals and exercise. I am super sore today to prove it.

What I ate:

Breakfast: I was running late for class so I made a fruit smoothie to-go: banana, strawberries, blackberries, spinach, almond milk, and orange juice.

Lunch: I made a tasty spinach salad with cucumber slices, strawberries, almond slices, feta, and raspberry vinaigrette. Daniel made me two scrambled eggs as well for a little protein.

Later before he went to work he sweetly drove me to Starbucks so I could get a Grande Soy Iced Chai Latte and he could get his much needed Americano. Apparently the non-drowsy allergy medication I gave him was making him rather drowsy.

For my workout I tried to mix it up a bit. I found suggestions online for Blogilates so I decided to give her videos ago. She has a youtube channel and blog with some really great workouts! I did this video first:

At the end she recommends other videos to go along with it. I guess it’s part of her monthly schedule she has set up on her site. So I followed along with all of them except the last one for the day. My butt was on fire and I sure as hell wasn’t doing another butt video especially when it’s called “Super Butt Workout!” They are definitely some great videos though. After that I decided to get my run on. I went 2.5 miles again. This time I decided to track it with Endomondo on my phone but I started it a little before I started running and stopped it during my walking/cool down so it doesn’t quite show my full distance. At the end of my runs I like to pick up the pace, as you can see by my max speed. 5:38 woot woot!

After my run, I refueled with a chocolate protein shake from Shakeology by blending the protein powder with a banana and some almond milk.

Dinner: I made a stir fry with white rice, cucumber, carrots, yellow squash, onion, and spinach. For flavor I added soy and teriyaki sauce. You can find my super easy stir fry recipe here.

So I feel pretty accomplished about yesterday! Hopefully I can make good decisions today too. Though I may cut out running since it’s chilly and misting still. We’ll see!

It’s a New Blog!

Ok, it’s not a new blog. But it is a new location. As in, I’ve switched over to the self-hosted world! So, hopefully I don’t lose all of my wonderful followers. WordPress is very vague on how my followers from wordpress.com can view my new wordpress.org site. Alrighty, now for the fun stuff. I owe you all an update because it has passed my deadline of my last goal by 11 days! Whoops! So, back in August I made a new goal to lose 10 more pounds by Halloween in about 10 weeks to get me down to 120 lbs. Well ladies and gents, I’m only at 124.6 lbs. However, I’ve at least finally reached my original goal I made: to lose 10 lbs from 135 to 125. It has been a slower process than I was expecting, but my weight hasn’t been jumping around so I’d say that it’s a solid steady weight loss. That’s a little over 0.5lb/week weight loss. I was initially wanting 1.5lb/week, but I’ll take what I can get.

I’ve never been one to really limit myself to indulgences, which I think partly contributes to my slow weight loss. I have been reducing the amount of sweets I eat but I still allow a piece or two of dark chocolate Toblerone when I’m craving it. It keeps my bigger cravings in check. I also have been slacking when it comes to working out, especially this past month. The good news is: I finally went running! Daniel and I ran two miles around the park. It wasn’t too bad, probably could have gone a third mile, but we decided to take it easy. My legs were surprisingly sore the next day! They haven’t been worked in a while, poor things. I’m hoping to get back into a regular workout routine. Ok “back into” may be stretching it, I’ve never had a regular workout routine! HA! But I’m hoping to start one!

P90x will happen I hope. We just need to return our pull up bar for something that works in our apartment (our doors are too wide!). But for now, running is definitely something I want to start doing again. I want to build back up that endurance!

Update on the new shoes: they are great! Very comfortable, but I’ve decided I do need my inserts. I could tell my feet were rolling in some. But man, I was lookin’ fly! Check out my annoyingly matchy running outfit:

As I mentioned the other day, I bought a tank top with my shoes because they matched and new workout gear always gets me motivated. Well, while my best friend, Charissa, was in town, she decided to give me an early Christmas present: matching shorts (thanks girl!!). They actually match almost perfectly to my new shoes that I’d swear Brooks made them! But it’s actually the brand MPG. They are SO comfortable! Also, note that the head band matches my ensemble as well. No shame.

After running on Saturday, Daniel and I had tickets to the International Food Festival put on by the International Coordinating Council at K-State. The food is always AMAZING and this year did not disappoint.

I wish I could tell you what all of this is but I was too excited to eat it to thoroughly read what and where it came from. From what I can remember there was food from Thailand, China, Spain, Nepal, and Mexico. I wish I could remember the rest but I can attest that everything was delicious! The left cup is full of soup from Mexico with beef and beans, and the right cup has Thai iced tea. It’s black tea and spices with milk–one of my fave teas! It’s up there with Chai. Chai and Thai for the win!

After dinner I spent one last time with Charissa in Aggieville (the bar district). Here’s a photo from the photographer who documents the happenings in the Ville. Left to right: Me, Charissa, Charissa’s hubby Jake!

It was a fun night but unfortunately they couldn’t stay out too late because they had a 12 hour drive back to NM the next day. But Charissa and I also went out on Friday night so that made up for it. We attempted to get several photos with both Jake AND Daniel operating the camera, and only one turned out good! Haha.

At least we have the memories! Definitely glad I got to spend a week with her! We may or may not have eaten shamelessly at our favorite restaurants while she was here. Some meals included veggies, so I’d say that’s a win.

I really need to be on here more often. I’ve noticed that without blogging everyday, I feel less accountable and more inclined to eat what I want and not workout. I need you back in my life, blogosphere! So you’ll be seeing me around a lot more again =) I know, I’m excited too! Goodnight!

So where has the time gone?! I think about you all every day! And my laziness. And the fact that I should blog more. And workout more. And that I’m a failure. Ok, I’m being a little melodramatic. But I seriously need to step up my game. Can anybody lend me their time management skills? Mine are pretty much non-existent. Thanks!

I really have no excuse for not working out or blogging. In the evenings after I’ve finished my homework/studying… I just… I don’t even know! Time disappears. I end up watching Dexter or something with Daniel and before I know it, it’s bed time. I’m an old woman now so bed time comes early between 10 and 11 pm. In my undergrad days, it was never before midnight! My how times change.

Ok, so what have you been up to? Well I’ve been up to eating healthy! Just kidding. I’ve been attempting to eat more salads. Check out these tasties:

Spinach salad with a greek spin. No olives but I added cucumber, tomatoes, feta, and some balsamic vinaigrette. So good!

This one was pretty much like the one above except with strawberries and raspberry vinaigrette. Sweet!

I’ve also been getting my fish on as well. Daniel has cooked us some tasty tilapia.

We opted to make something easy by baking it with the Chipotle Raspberry Sauce like we did with the salmon here, but in foil in the oven at 400 degrees F. I think it was in there for 15-ish minutes. It was good but I think the sauce is even better with the salmon.

Daniel also wanted some breaded tilapia one night which I am all for. I made the bread mixture with Panko, corn flake crumbs, parsley, and lemon zest. It was nice and crispy.

We also attempted to make our own version of Chipotle with rice, corn, black beans, sautéed veggies, salsa (homemade with tomatoes, cucumber, and onion), and shredded kale on top! We were out of cheese and didn’t have sour cream so I opted to spread some jalapeño Laughing Cow cream cheese on my tortilla. It was pretty good!

We’ve also had some not-so-healthy dinners.

These are THE BEST fish tacos you will ever have. From So Long Saloon in Manhattan. I love the crispy shell and the tasty sauce mixed in the with coleslaw on top. Oh it’s sooo good! We ordered them to go and ate them while we made the Chipotle Raspberry Black bean dip. I’m obsessed.

I’ve been trying to at least eat a healthier, more filling breakfast than my usual cereal. I’ve been meaning to try overnight oats. Ever heard of them? I think they’re a new trend but I first heard of them from Julie at pbfingers.com. Let me just say–they are so good!

I have yet to try them with fruit. I’ve mainly been sticking to pecans and Ghirardelli milk chocolate chips. It’s like dessert for breakfast! Definitely make them with chia seeds–they fill you up! I don’t get hungry at work in the mornings anymore when I eat this for breakfast. It’s amazing! I’m usually hungry two hours later after breakfast like clockwork.  On the days I forget to fix overnight oats the night before I just make hot oats with the same toppings. The chocolate melts and makes it so good. It’s only 70 for 16 chips 😉

Speaking of chia seeds. Now that I’ve had them I’ve started noticing them more in other items, like my tortilla chips!

Yeah, Walgreens definitely brought the satisfaction. It made me feel a little better about eating the bean dip with these.

So remember when I bought new running shoes a couple months ago? I really liked them (the Brooks Adrenaline 13) but I felt they were too similar to my old Brooks Ravenas. Also, I accidentally bought the wide size so I had to tie them a lot tighter for them to fit the same snugness. I realized this after one time of wearing them indoors so I continued to wear my old shoes until I exchanged them for….. drum roll please….

They’re so light, comfortable, and still have good support! I’m going to try them out as is but if feel like I need more cushion I have some inserts I can use. They just fit my foot shape so much better. I’m in love.

I took a lot more than 3 photos but I’ll spare you. I’m so pumped to wear them. It’s been so long since I’ve gone running. I can’t wait to get back in the game! I also bought a tank top that matched my shoes… it was meant to be!

Alright, enough about food and shoes. My best friend Charissa is in town and I’m so excited! She’s been here all week and tonight we are reliving our days in the Ville, Aggieville that is (the bar district for all you non-Manhattan folk).  It shall be fun! She also bought some new running shoes the other day (we went shopping together) and she chose the new Brooks Adrenaline 14. They are awesome! Hopefully we can motivate each other to actually run in our new shoes! Wait, didn’t I say enough about shoes? Sorry!

It’s the Most Wonderful Time of the Year

It’s OCTOBER! The best month ever. Fall is my favorite time of year.  Leaves change hues, pumpkins are everywhere, and mild weather make for a beautiful month. I still need to buy a pumpkin. And make/buy fall decorations. It’s happening.

So I’m not sure where the time went yesterday but 11PM came all too soon and I didn’t get a chance to blog.  It may have been due to the 4 episodes of Breaking Bad that Daniel and I watched yesterday.  We’re trying to catch up to the series finale! Don’t spoil it! We have 3 episodes left and will more than likely watch them tonight.

Not bad on calories considering I ate a few Pumpkin Scones…. that’s right, I made PUMPKIN SCONES! While watching the Chiefs game on Sunday I had a burning desire to bake something.  Maybe it was the sweet smell of my new butternut pumpkin candle (if it was edible, I would eat it). So I hopped on Pinterest to check out my options from sweets I had previously pinned.  I must say, it was a good choice, because they turned out amazing!

Yeah, I took a lot of photos. They’re just so photogenic! I love scones.  After eating several the past couple days, I’ve noticed that they fill me up more than other sweets.  Yes, I was craving them.  But they did also offset my hunger compared to empty calories like chips or a cookie.

This batch made 12 and there’s one left!!!  They were popular on Sunday with our guests and of course Daniel and I have been snacking on them since.  I wish there was more…

Workout Recap

Sunday was my rest day. Ha. Aren’t most? But I did run yesterday! It was getting late so Daniel and I made a quick 3 mile trip around the park. Nothing too exciting though we did do a little speed work.  For some reason it was a lot harder last night for me to sprint than before. Maybe it was all of those scones weighing me down.

I really want to try CrossFit but it’s expensive so I think we’re going to possibly do P90x if we can find a way to get the DVDs.  However, K-State has a free CrossFit intro class that we plan to try out Saturday.  I at least want to see what it’s like but I’m pretty much ready for anything that builds strength.  I need something to hold me accountable like a class or schedule of some sort.  Trying to get motivated at home is hard.  If we do P90x we plan to set aside a certain time every day for it.

Pumpkin Patch

Our outdoorsy day took a little different turn than what I mentioned yesterday.  We did go on a great run. FOUR miles! Instead of running around the park the whole time we swung around it and then up a hill. It was tough and once we made it up the hill we had to walk a little.  We went two miles and then turned around and ran the same route back.  It was a nice change up! And the downhill part was a breeze!

We ended up not going hiking in the Konza or mini golfing. Manhattan has an annual Pumpkin Patch that was going on and I did not want to miss it.  It’s not a typical drive out to a pumpkin patch with hay rides. It’s actually more of a craft show but with lots of pumpkins.  Most of it is outside so that was the outdoorsy part.  We ended up buying some fancy jam (dandelion and raspberry jalapeño), some candles (butternut pumpkin and hot orange danish), some earrings that perfectly matched the ring Daniel got me for my graduation last may (crazy awesome), and some caramel kettle corn. A successful day! And we ran into a lot of people we knew there.  It’s a popular place!

I’m currently warming my butternut pumpkin candle right now. It smells soooo good!  It’s not really a candle, it’s those wax melts that you use in Scentsy burners.  It officially smells like fall in my apartment. Now I just need some fall decorations! We were going to buy pumpkins but all of the big ones were gone by the time we got there.  It was the last day and the last hour.

The host of the Grad Student Association BBQ from Saturday was so generous in giving everyone some leftovers. In fact, we have enough to still eat more of it! He’s a second year grad student and a grill master! He made all the sauce himself.  There was a sweet bbq sauce and a spicy balsamic sauce.  I mixed them together. It was tasty!

I added coleslaw on top per his suggestion.  Apparently that’s a thing. Have you ever done that? It’s really good.

For dinner, Daniel and I were out and about aka Starbucks, which is right next to Coco Bolos, a local favorite that boast flavors from Gulf Coast South Texas and Southern New Mexico.  I hadn’t been there in a while and we were getting hungry.  Everything sounded good but I finally decided on the Bolos Fajita Quesadilla with chicken.  I let Daniel have one of my slices.  It was really filling and I couldn’t finish it all.

I took an online test yesterday evening, so I of course needed some reward for doing it on a Saturday night.  Daniel and I decided to hit the bar scene with some of his friends. I had a couple beers and an O-bomb.  Definitely a nice relaxer after a 2 hour test and a nice end to a great outdoorsy-ish Saturday.

Alright, so I realized that I haven’t updated my measurements since I first took them back in July. Good news! I’ve actually lost some inches! I didn’t think it would really show since I’ve only lost about 5 lbs but that equals 6 inches off!

I forgot to measure my arms the first time so I just made my current measurement the original.  These are all measured at the widest part, while relaxed.  No flexing or sucking in. I’m happy to see some improvement!

Today, we have a couple people over to watch the Chiefs game. I have no commitments today and it feels so good! I can do whatever I want! Don’t you just love those days?

Back In Action

Wow. What a whirlwind week.  Let me recap:

Ok, I failed at keeping track of my calories… however, I am losing weight! I think the last time I said my weight was here back on September 10th where I claimed I was 129 again.  Ok, realistically I was probably at 129.4 or something. But this morning I was at exactly 129.0 which I haven’t been in a loooonnnngggg time.  I hope to get down to 128 this week! Maybe even 127 if I step up my game.  I realize that October is upon us and I only have about 5 weeks to get down to my goal of 120.  I thought I’d be doing better by now but I seem to be plateauing.

Food-wise, this week has been better than most.  I failed at keeping tracking of all my calories (too stressed to care), but I really didn’t have any sweets all week except for last night.  And most of my meals consisted of lots of veggies.  I made Spaghetti Squash again.  Of course adding lots of veggies and more squash to the sauce!

I chopped up fresh veggies and snacked on them with a little ranch.

Daniel made a delicious lemon peppered Swai with Alfredo pasta.

Daniel also made us a stir fry with the Bangkok Peanut Sauce again. Sans chicken this time.

And then in my rush between classes and work, I made these little guys as a snack/lunch.  A slice of bread with turkey slices, spinach, feta, and Chipotle Raspberry sauce. Tasty!

Last night, the Grad Student Association for the College of Business Administration was hosting a BBQ potluck for all the grad students.  I decided to make Southwest Chipotle Chicken Salad.  It turned out really good and everybody was complementing it.  I found the recipe on Facebook, a friend had posted the link.  I failed to get a picture of it, I was running late as usual. But it was delicious!  I followed the recipe pretty close except I used Southwest Chipotle spice instead of taco seasoning and didn’t add any cilantro. I would definitely make it again, but there was a lot of mayo in it.  Good thing everybody ate and I didn’t have to worry about bringing any home! Seriously people, it’s a party pleaser.

Oh, and for desserts, one of the girls made delicious chocolate cupcakes with a salted caramel frosting. So good! And then somebody had brought a variety cheesecake so I picked out one of turtle cheesecake slices.  I shared both of them with Daniel and actually ended up giving him the bigger halves.  Progress. Haha.

Ok, so my workouts this week consisted of running.  I went running Sunday for 3.5 miles.  And then Tuesday, as I mentioned earlier, I went on a trail run for 4.7 miles.  It was so much fun! There were a lot of little hills which made it a little challenging.  And the scenery was gorgeous! It might be our new Tuesday tradition. Other than that, I didn’t work out.  I can’t believe how time consuming it is to apply for internships and prepare for a Career Fair (which was my first time).  I hope it all pays off!

I would have had time last night to blog after the BBQ but Daniel and I wanted to have a nice quiet movie night.  After we cleaned of course. Haha.  Daniel claims I’m an extrovert now, because the moment we got home I went on a cleaning spree and had so much energy.  I have to argue that though, I don’t think it was the group gathering that gave me all the energy, it was the fact that the apartment needed to be cleaned and I finally had the time to do it.  I usually like to be alone to recharge my batteries, so to speak.

Today, Daniel and I want to do a lot of out door activities to enjoy the weather before it turns cold.  We plan to go mini golfing, running, and possibly hike around the Konza Prairie.  Should be a fun day!

I realize that I consume a lot of things that I don’t need.  Take the dirty chai latte, for example.  I mean, I was a little tired, but I didn’t really need to have it.  I almost equate lattes to sodas.  They’re empty calories.  Milk in a latte is a little more substantial than soda, but not much.  I just love lattes!  It’s not even that I need caffeine either. Sometimes just having something tasty to drink wakes me up.  However, I could try to drink them less.

I also obviously didn’t need all the alcoholic drinks either.  But, it was the weekend and I hadn’t hung out with my friend Corey in a couple weeks.  She’s always a blast!  It was a nice stress reliever going out on the town with her.

So this “Sandwich” that I have listed — there’s a story behind it. A year ago, Aggieville (the downtown shopping/bar district) put on a Chili Crawl.  The restaurants and bars there let you sample their versions of chili and offer cheap 7oz beers.  Corey invited me along for chili consumption, and then we were going to stay out for a fun night. Well after all the chili I decided I needed to have a nap in order to last the whole night so I went home for a couple hours.  Later when I came back out, Corey had been drinking the whole time.  She was pretty much gone. I’m not sure she even really knew I was there, haha! But I ushered her around the bars with me. Well, we got hungry.  And the donut shop had recently opened up a food truck behind it, so we decided to check it out.  They have donuts, corn dogs, and this SANDWICH.  I mean, it just sounds heavenly: Mac n’ Cheese Grilled Cheese Sandwich. And for an extra $1 you can add bacon (so of course we added bacon).  It’s the most fabulous thing you will ever taste.  We’ve dubbed it THE SANDWICH because it’s the only thing Corey remembered that night, haha! You know it’s good when that’s the only thing you recall from a night of partying.

The picture obviously doesn’t do it justice because you can’t see the mac n’ cheese or bacon in it. Photo fail. But I had every last satisfactory bite of it.

Here’s a little more of our night.  We’re about to take Belfast Bombs which is Guinness and Bailey’s. I’m not sure what Daniel is doing with his lips.  I ended up not being able to finish mine because it curdled. I can’t chug!

It was a fun night!

In the midst of all my bad decisions, I did have a few healthy things yesterday. Like the Almond Crusted Swai. It’s one of our favorites!  We didn’t add parmesan cheese this time so it was a little healthier.

Workout Recap

This doesn’t really balance out with everything I ate yesterday but I ran 4.6 miles! And I did some speed work on the last mile.  It felt good!  The weather was amazing for it. I went around 6pm and it was breezy and in the 70s so I didn’t get too hot.

So my Friday was pretty good. How was yours?!

Now, I’m finally gonna get a jump on all those things I said I would get done this weekend. And of course, I gotta watch the K-State game today!  Enjoy your saturday!
