Successful Day!

It’s a very dreary day here in Kansas. The bright side (haha), is that the rain/mist seems to have eliminated the allergens in the air temporarily. I just now sneezed for the first time today at 4:30! That’s a record.

Yesterday was pretty successful overall for meals and exercise. I am super sore today to prove it.

What I ate:

Breakfast: I was running late for class so I made a fruit smoothie to-go: banana, strawberries, blackberries, spinach, almond milk, and orange juice.

Lunch: I made a tasty spinach salad with cucumber slices, strawberries, almond slices, feta, and raspberry vinaigrette. Daniel made me two scrambled eggs as well for a little protein.

Later before he went to work he sweetly drove me to Starbucks so I could get a Grande Soy Iced Chai Latte and he could get his much needed Americano. Apparently the non-drowsy allergy medication I gave him was making him rather drowsy.

For my workout I tried to mix it up a bit. I found suggestions online for Blogilates so I decided to give her videos ago. She has a youtube channel and blog with some really great workouts! I did this video first:

At the end she recommends other videos to go along with it. I guess it’s part of her monthly schedule she has set up on her site. So I followed along with all of them except the last one for the day. My butt was on fire and I sure as hell wasn’t doing another butt video especially when it’s called “Super Butt Workout!” They are definitely some great videos though. After that I decided to get my run on. I went 2.5 miles again. This time I decided to track it with Endomondo on my phone but I started it a little before I started running and stopped it during my walking/cool down so it doesn’t quite show my full distance. At the end of my runs I like to pick up the pace, as you can see by my max speed. 5:38 woot woot!

After my run, I refueled with a chocolate protein shake from Shakeology by blending the protein powder with a banana and some almond milk.

Dinner: I made a stir fry with white rice, cucumber, carrots, yellow squash, onion, and spinach. For flavor I added soy and teriyaki sauce. You can find my super easy stir fry recipe here.

So I feel pretty accomplished about yesterday! Hopefully I can make good decisions today too. Though I may cut out running since it’s chilly and misting still. We’ll see!

Day Fifteen ~ Vegan Challenge

Day 15
Eat Drink
Wake Up 8 oz of water
Breakfast Oatmeal with a variety of toppings OR 2 pieces of whole wheat toast topped with a nut butter of your choosing and a side of fruit (apple orange or banana) 8 oz of water
Morning 8 oz of water before lunch (I always keep a water bottle handy)
Lunch Leftover Easy Stir Fry 8 oz of water
Afternoon If you're hungry any time throughout the day have Zucchini Chips or fresh veggies and 2 Tbsp hummus 8 oz of water before dinner
Dinner Black Bean Veggie Burgers from My Whole Food Life 8 oz of water
Exercise At least 16 oz of water after exercise to rehydrate

For breakfast I opted for toast with peanut butter and banana slices and lunch was left over stir fry.

The black bean veggie burgers were so good I had to make them again. They turned out delicious! I ate it with some ketchup and a side of steamed broccoli (my new favorite).

 Afterwards I made sure to have another good stretch and followed this video.

Day Fourteen ~ Vegan Challenge

Afternoon If you're hungry any time throughout the day have Zucchini Chips or an apple with 2 Tbsp of nut butter (I like almond or peanut butter) 8 oz of water before dinner
Dinner Easy Stir Fry 8 oz of water
Exercise At least 16 oz of water after exercise to rehydrate

For breakfast I had oatmeal with dried cranberries, cinnamon, and banana slices.

The Sweet Potato Surprise tastes just as good the next day. I will definitely be making it again.

For a snack I came up with the idea to make Zucchini Chips. I’ve seen recipes floating around the internet before but I added my own mix to it. Recipe to come!

Let’s just say, they turned out so good, I ate them all by myself and made them again the next day. Two whole zucchinis in two days. Oh yeah.

For dinner I returned to the old favorite.

For exercise I started the Five Day Workout Plan all over again.

If 5lb weights are too light bump it up a bit! I use 10 lbs to get a better workout.

Day Four ~ Vegan Challenge

Day 4

Dinner Sweet Potato Veggie Burger from My Whole Food Life. It makes several patties so you'll be able to save some for lunch tomorrow 8 oz of water
Exercise At least 16 oz of water after exercise to rehydrate

Per suggestion from the recipe for the veggie burgers, I topped mine with avocado. You can save the leftovers for your lunch tomorrow.

By now I was going crazy for some dessert so I made the One-Ingredient Ice Cream. So good!

For exercise I did the third day of the Five Day Plan.

I used my 10 lb weights again instead of five. I felt the burn! I did an extra long stretch session afterwards because I was feeling a little tight. Day four was another success!

Easy Stir Fry

It’s such a simple dish, yet can have so much variety that you’ll never get bored! I make stir fry pretty frequently and enjoy adding whatever veggies I have on hand at the time.

What you’ll need:

1 package of firm tofu
2 tbsp toasted sesame oil
3 carrots chopped
1 head of Broccoli, chopped
1/2 green or red pepper, chopped
4-5 cups spinach (loosely packed)
2 cups cooked rice or quinoa
1/4 cup soy sauce
1/8 cup teriyaki sauce
1/2 tsp garlic powder

Preheat the oven to 400 F. Drain the tofu and pat dry. Cut tofu into cubes and place on greased baking pan and bake for 45 minutes. In a large sauce pan over medium heat, cook the oil, carrots, broccoli, and pepper until soft. Then add the remaining ingredients, and mix well. Cook for few minutes until heated through. Enjoy!

My Dog Ate My Posts

Do you believe me? Ahhh I’m getting so behind! I can’t believe it’s been TWO DAYS since I’ve posted.  Life is getting busy! I don’t like it.  Summer is officially over. =(

I’ll go by day, giving you the play-by-play as usual.

So this is when we had Daniel’s cousin Sabra and her hubby, Ramon, over.  It was so much fun hosting them!  We made a delicious dinner consisting of coconut salmon and stir fry.  We used almonds, Panko, and shredded coconut for the crust and it was sooo good!  Then we did our typical stir fry with veggies, soy, teriyaki, ground red pepper, garlic powder, and honey.  We added less spices this time but it was still very flavorful. Oh and this is not pictured, but you know that Raspberry Chipotle Sauce we use for the Chipotle Raspberry Black Bean Dip? We decided that would compliment the salmon really well so we made that our dipping sauce.  It was amazing together!

Since Daniel and I were trying not to eat any sweets this week (huge fail, by the way), I decided to just make some of that Banana Nutella Ice Cream.  I received some good reviews!  I made a bunch of it and still have some left over so I’ll definitely be snacking on that sometime soon.

So Thursday started off pretty healthy.  But you know how I am when there’s sweets around me. My friend, Jen, is getting married today! So Thursday was her Bachelorette party.  There was chocolate fondu and I could not resist.  I’m not sure whose idea it was to have rice crispies to dip in the chocolate, but they are a genius! It was probably my favorite.

Yes, I was the only “R” name there, haha!  There was more girls but they came later.  We started out at a hotel for the fondu, drinks, games, and gifts.  Then we headed to the bars!  The party was in Lawrence, KS and I had never been to the bars there but they were pretty fun! We went to the Sandbar (90s music and surfboards, reminded of the Shark Bar in Power & Light in KC).  They had awesome drinks! I ordered the Bahama Mama.

It came with the beads and these stunna shades, haha! And yes, that is a penis straw.  Why leave them behind when you can bring them out to the bars?!

It was such a fun night! I can’t wait for later today to see her get married!

Yesterday, Daniel’s friend Bin invited us over for some home cooked Chinese food at his house.  His room mate cooked it and did an amazing job!  I can’t even tell you what it all was, but it was good!

Then I went to a friends’ house for a little get-together.  I had more snacks and some peach sangria.  Oh man, that sangria was so good! I plan to make some for myself sometime if I can remember the recipe!

Afterwards I met up with Daniel and Bin again and he bought us some Sonic Milkshakes before going to the bars to play pool.  I had the Banana Creme Pie milkshake. Heavenly.  And heavy in calories.  Good thing I didn’t drink all of it.  It was tempting though.

Ok, so I majorly failed in having no sweets this week. I should have tried harder. I gave in so easily!  How do I resist?  And the wedding is today so I obviously have to have wedding cake! I know, awful mindset.  We’ll see if can do better next week.

I’m on a Boat!

And it’s going fast and I’ve got a nautical themed pashmina afghan! Ok I don’t have either of those but I was on a boat! Unfortunately we had some technical difficulties and the boat was over heating, meaning we couldn’t go fast. And at one point we couldn’t go at all! The boat wouldn’t start. Luckily, we had a jetski that could tow the boat back to the dock. It was a slow process but fun nonetheless!  In the meantime, while the boat was stationary in the water, we swam, tubed, and drove the jetski around.

We had so much fun and plan to make this a yearly expedition, assuming we all can get away from school and jobs.  Here we are chillin’ on the back of the boat while it’s being tugged in by Heather’s father.

Boating trips = over eating. When there are chips around me I just can’t stop! We had an awesome meal with the kabobs and rice. We also stir fried the extra veggies that wouldn’t fit on the kabobs. Best idea ever. We just added a tiny bit of teriyaki sauce for flavor.

Weekends apparently are my break days because I always have so much going on that I don’t find time to workout. It was definitely fun relaxing and hanging out with so many friends though.
