Breakfast or dessert? You decide!😋

I mean, it was my favorite candy and since Halloween is coming up it's the perfect time to enjoy a healthier, plant-based version.

Directions:
Remove the pits from the dates and soak them in a little hot water for 10 minutes. Then mash them with the water to create a date paste. Mash the banana as well and stir both in your oats and milk with the maple syrup, peanut butter, cocoa powder, and cinnamon until mixed well. Place in the refrigerator for at least a few hours, or overnight. Top with peanuts and dairy-free chocolate chips.

Not a fan of oats? You could also do this with a chia seed pudding. It's so good too!

Surprisingly, a lot of mainstream candy is vegan, so I rounded up a list of them to make it easier for you to pick out stuff at the store. Now, I'm not sure if Trick or Treating is really happening this year, but if you want some treats to indulge in for yourself - these are vegan. Definitely not saying these are healthy (it's candy after all, but Halloween is a holiday in the US and I'm all for celebrating!). Yes, there are vegan brands that make similar things but they can be hard to come by and can be pricey so I wanted to give you options. Enjoy!

Fall weather = toast, no?

I could eat toast all year round but there's just something about having a warm piece of bread when the weather gets cooler. So this is for all you folks enjoying the autumn season!

Growing up, the only way I ate toast was with butter and jam. I didn't know toast could have so much variety! And french toast was a thing at restaurants but never something we made at home.

So here are 4 toast ideas to mix things up! 2 savory and 2 sweet:

tofu scramble - I have a past post with the recipe! It's a quick and easy dish to serve up on a piece of toast.

avocado & balsamic - a fun variation of avocado toast but with added tomatoes, a drizzle of balsamic vinegar, and some sesame seeds (hemp seeds would be good too).

almond butter & banana - such an easy snack or quick breakfast.

pumpkin french toast - my new favorite pumpkin recipe - the recipe on my feed from a few weeks ago!

Where are my beet lovers at?

I had someone recently ask for a beet recipe as they are starting to try more foods that they used to not like as much and this soup immediately came to mind. It's one of my favorite ways to eat beets!

This Borscht (red beet) soup is so filling and delicious. Seriously, you have to try it!

Recipe:
3 medium beets, peeled and grated
4 cup of reduced sodium veggie broth + 6 cups of water
3 medium yukon potatoes, peeled and sliced
2 celery stocks finely chopped
2 carrots peeled and sliced
1 small red bell pepper, finely chopped
1 medium onion finely chopped
4 Tbsp tomato sauce
2 Tbsp white vinegar
Dash of salt, pepper to taste

TIP: Instead of grating, we put the veggies in the food processor until they were finely chopped--quick and easy!

Directions: In a large soup pot over medium/high heat cook the beets for 10 minutes. Add some water so they don't stick. Then add the broth and water, plus the potatoes and carrots. Cook for 10-15 minutes until you can easily pierce with a fork. In the meantime, in a large skillet over medium/high heat, cook the onion, celery, and carrots with a bit of water so they don't stick. Cook for 7-8 minutes, stirring occasionally until soft. Add the tomato sauce, stirring for 30 seconds to incorporate, then transfer everything to the soup pot to continue cooking with the potatoes. Add the vinegar, salt, and black pepper and simmer for an additional 2-3 minutes.

Don't worry, you'll love these!

Chocolate peanut butter balls are my favorite treat, but add some pretzels to the mix for some saltiness and you have a winning combo!

Roll peanut butter into balls and freeze while you melt chocolate. Add some pretzel legs and then dip into the chocolate to cover. Refreeze and enjoy!

Let's talk 80/20 balance!

You know I advocate for a whole food plant based (WFPB) diet but I get that eating this way 100% of the time is difficult.

Most restaurants don't offer these options and most convenience options at the store are far from it.

What I've learned from the leading plant-based doctors is that although a WFPB diet is best for health and longevity, what we eat a majority of the time is what matters. So don't stress about eating processed food every once in a while. You have to feed your body and your soul sometimes!

That's why I follow an 80/20 balance. 80% whole foods, 20% processed.

Take this example day of eats, I had some fried tortilla chips with my salsa. Sure I could have baked my own tortilla chips, but that's not very convenient. So I bought some.

What are your thoughts on the 80/20 split? Do you follow something similar?

What are your kitchen appliance essentials?

Aside from a stove and oven, I think these four appliances would be enough to get you up and running, making tons of different types of vegan foods and cuisines.

We use all of these to make a variety of foods and each one has its unique purpose in our kitchen.

Although you could get by without these, I think they are essential for making delicious sauces, dishes, as well as the added convenience they provide. (Honestly convenience is key to sticking to a plant-based diet!)
