Coconut  Vegan Shrimp

It looks so much like real shrimp and has a delicious seafood-y taste thanks to a secret ingredient. They're also easy to make and can ready in less than 30 minutes!

What you'll need

For the shrimp: vital wheat gluten, tofu, beet juice, lemon juice,  white miso paste, salt, black pepper, old bay seasoning, paprika, garlic powder and kelp granules.

What you'll need

For the breading: unsweetened shredded coconut, panko breadcrumbs, non-dairy milk, whole wheat flour.

Blend

Blend all ingredients for the "shrimp" except for the vital wheat gluten in a blender or food processor until smooth.

Knead

Add the vital wheat gluten to the mixture and knead for a few minutes until a dough forms.

Divide

Divide the dough into 10 even pieces and roll each piece between your hands to form a log.

Shape

Curve the dough to form a crescent shape to look more like shrimp.

Coat

Coat the vegan shrimps by dipping in flour, then milk, then tossing in panko and coconut.

Cook

Place in air fryer and cook on each side for 5-6 minutes until golden. See full recipe for oven and stovetop instructions.
