Easy Dairy Free Mashed Potatoes

What you need:

Wash the potatoes thoroughly to remove any dirt, then slice into 1-inch cubes. Slicing before cooking ensures they cook more evenly and quickly.
Add the potatoes to a large pot and cover with cold water.
Bring to a boil and cook for 10-15 minutes until soft. The potatoes are ready when they can easily be pierced by a fork.
When the potatoes are done, drain the water, leaving ½ - ¾ cup of water in the pot; about 1 inch of water in the bottom of the pan.
Mash the potatoes with a masher or fork. Stir in the garlic powder, onion powder, and season with salt and pepper to taste.
Serve with your favorite gravy and enjoy! Optional serving ideas: top with chives, roasted garlic, or nutritional yeast.
