Healthier Lemon Bars

Why you'll love it

It's the same great flavor of traditional lemon bars, made gluten-free, dairy-free and with less sugar required.

What you need:

Rolled oats

Almonds

Pitted dates

Ground flax seeds

Lemon juice

Maple syrup and/or coconut sugar

Coconut cream

Cornstarch

Prepare crust

Combine all crust ingredients in a blender or food processor.

Bake crust

Press crust into lined baking dish and bake at 350F for 10-12 min until golden.

Prepare filling

Add filling ingredients to a saucepan or skillet over medium heat, whisking constantly until thickened.

Assemble

Once filling has thickened, pour over crust and allow to cool before transferring to fridge to set up.

Serve

After 1-2 hours in the fridge it's ready to be sliced and served! Top with powdered sugar if desired.
