What you need:
Raw cashews, lime, low-sodium soy sauce, ginger, distilled vinegar, red chili paste, maple syrup, cilantro and red pepper flakes

1. Soak
your cashews to soften. Then, drain and rinse. Once this is complete add them to a high-speed blender.

the rest of the ingredients with the cashews except for the cilantro and red pepper flakes to the blender. Blend until smooth and creamy.

the cilantro and blend just until the cilantro is chopped up into small pieces but not fully pulverized.

the dressing and adjust the salt, spice level or sweetness as needed. If you prefer it spicier, add more red chili paste or stir in some crushed red pepper.
