One Pot Feta Pasta (dairy-free!)

It's the same great flavor of the popular baked feta pasta recipe but in less time with less mess! And it's vegan!

What you need:

Silken tofu

Nutritional yeast

Lemon juice + apple cider vinegar

Minced garlic

Dried basil, oregano, salt

Pasta

Cherry tomatoes

Spinach or fresh basil

Cook Pasta

First, make pasta according to package instructions. Drain and set aside.

Prepare Feta

Add all feta ingredients to a blender and blend until smooth.

Heat

Using same pan as before, heat tomatoes until they start to shrivel and pop.

Assemble

Add feta sauce along with basil or spinach. Heat through, then add cooked pasta.

Serve

Enjoy with more fresh basil on top or a sprinkle of nutritional yeast.
