This vegetarian adobo taste just like the traditional Filipino dish! This recipe uses tofu cubes baked to golden brown perfection and simmered in a sweet, salty, and tangy adobo sauce.

What you need:

Firm tofu, red onion, garlic, black peppercorns, low-sodium soy sauce, vinegar, vegetable broth, bay leaves, coconut sugar, cornstarch, and green onions.

1. Slice the tofu into cubes and either bake or air fry, flipping halfway.

2. Add onion and garlic to a preheated skillet and sauté. Add a splash of vegetable broth to prevent sticking.

3. Pour in soy sauce, vinegar, vegetable broth, bay leaves, and coconut sugar. Stir well and bring to a gentle simmer.

4. Combined the golden brown cooked tofu into the sauce and toss to coat.
