Chili Sin Carne Recipe

What you need:
2 cans each: kidney, black and pinto beans
2 cups veggie broth
1 can diced tomatoes
6 oz tomato paste
1 yellow onion
Chili powder, cumin, oregano, salt, black pepper
2 carrots
4 garlic cloves
1 bell pepper
2 celery stalks

Prepare veggies
Finely chop vegetables either with a food processor or sharp knife.

Cook vegetables
Over medium heat, cook onion, garlic, celery, and carrots until soft and translucent; about 5 minutes.

Combine
Add bell pepper, diced tomatoes, tomato paste and spices, sauté for couple minutes then add broth and beans. Stir well to combine.

Simmer
Increase heat to a boil, then reduce to a simmer. Cover and let the mixture simmer until it has thickened and liquid has reduced; about 25-30 minutes

Serve
Top with fresh cilantro, lime juice, sliced avocado, or whatever else you like!
