Cheesy Vegan Broccoli Rice Casserole

What you'll need

Broccoli, veggie broth, breadcrumbs, coconut milk, rice, nutritional yeast, seasonings

Season

In a large casserole dish, combine rice with seasonings and mix well to evenly distribute. Then flatten out the rice mixture into an even layer.

Layer

Add the broccoli next in an even layer over the top of the rice mixture.

Pour

Heat the broth until just boiling and pour over the broccoli rice. Next pour over the coconut milk.

Combine

Add all of the breadcrumb topping ingredients to a small bowl and mix well to combine.

Distribute

Distribute the breadcrumb topping evenly over the top of the broccoli. Cover with foil and bake for 20 minutes.

Broil

Uncover and continue baking for another 8-10 minutes. Then broil for a couple minutes to brown the breadcrumbs.

Serve

Best enjoyed immediately but can be prepared ahead of time and reheated. Makes a great side or main dish the whole family will love!
