Easy Potato Rice

One-Pot Side Dish!

This easy one-pot recipe made with hearty potatoes and rice comes together quickly and can be ready in 30 minutes!

What you'll need

Yukon potatoes, basmati rice, yellow onion, lemon juice garlic, ground cumin, garam masala, turmeric powder, chili powder, salt and cilantro.

Wash

Wash rice in fine mesh strainer until water runs clear, then transfer to a bowl and cover with water to allow rice to soak for 15-30 minutes.

Chop

Meanwhile, prepare the vegetables. Peel and chop the onions. Wash, peel and chop potatoes into 1-inch cubes.

Sautee

In a large pan over medium heat, add the onions and cook until translucent. Add the garlic and potatoes and continue cooking for 2-3 minutes.

Season

Add seasonings and stir well to coat, cooking for a minute until spices are fragrant.

Boil

Add the broth, lemon juice and stir. Turn up heat to a boil. Drain the soaked rice and add to the pot, stir well to distribute. Cover and simmer until liquid is absorbed.

Steam

Turn off heat and leave for 10 minutes with lid on to allow the rice to steam off any excess moisture. Fluff with a fork and serve!

Serve

Top with fresh cilantro if desired and serve! This makes a great side dish but is flavorful enough to be a main dish too!
