Easy Vegan Burrata

This vegan burrata is creamy, cheesy, and perfect for so many dishes! It tastes very similar to the real thing but is completely dairy-free!

What you need:

– raw cashews – coconut cream – apple cider vinegar – nutritional yeast – cornstarch – salt

Blend

Blend the ingredients until completely smooth. It will seem thin at this point but will thicken up once heated.

Heat

Transfer the mixture to a saucepan over medium-high heat. Whisk until the mixture thickens and becomes creamy.

Cool

Remove from heat, then transfer to a bowl lined with plastic wrap. Twist the top and place in an ice bath to cool it further.

Freeze

Place the vegan burrata balls in the freezer for one hour to chill.

Serve

Serve over pizza, pasta, and salads like this Caprese salad with balsamic glaze.
