Easy Vegan Elote (Mexican Street Corn)

Why you'll love it

Elote is so flavorful! You are going to love this grilled corn topped with vegan parmesan and vegan sour cream.

What you need for the corn:

6 Ears of Corn

1 Lime

Cilantro

Chili Powder

Smoked Paprika

What you need for the Vegan Parmesan:

Raw cashews, nutritional yeast, garlic powder, salt.

What you need for the Vegan Sour Cream:

Raw cashews, non-dairy yogurt, lemon juice, apple cider vinegar, salt.

Grill

Remove the husks from the corn and place on a medium-high grill, cook on all sides until the corn is complete and has grill marks, 3-4 minutes per side.

Pulse

Add the vegan parmesan ingredients to a small food processor or blender and pulse until it resembles grated parmesan.

Blend

Add the vegan sour cream ingredients to a high speed blender and blend until smooth. Scrape down sides as needed.

Assemble

Drizzle the corn with the vegan sour cream and sprinkle with vegan parmesan. Top with cilantro, smoked paprika and chili powder.

Serve

Recommend not dressing the corn until just before serving and storing the extra vegan parmesan and sour cream separately.
