Want a meaty sandwich without the meat? This epic vegan BBQ sandwich is going to blow your mind! Seitan (vital wheat gluten) gives it a meat-like texture that satisfies!

What you need:

For Seitan: vital wheat gluten, nutritional yeast, garlic powder, ground cumin, paprika, black pepper, water, soy sauce, and tahini For the Sandwich: whole grain bread, lettuce, tomato, avocado, red onion, vegan BBQ sauce, and yellow mustard.

1. Combine all of the dry ingredients in a large bowl. Combine the wet ingredients in a small bowl. Then add the wet ingredients to the dry and mix well. Knead the dough until it becomes elastic.

2. Place the dough on a pre-greased baking tray (or line with parchment paper) and flatten out to 1/2 inch thick. Bake the seitan for about 35-40 minutes until it has a sturdy texture.

3. Slice the seitan into strips. Cut 9 lines across the width and one down the middle lengthwise to make 18 total strips (if not adjusting servings).

4. Assemble your sandwich to your liking with the rest of the ingredients and add the seitan.
