The combination of red potatoes, vegetables and a  medley of seasonings makes for a scrumptious and nutritious vegan hash breakfast!

What you need:

1. Preheat the oven to 425°F. Toss the cubed potatoes. Spread them in a single layer on a baking sheet. Roast in the oven for 20-25 minutes until crispy.

2. Add the diced onion and saute until translucent. Then add the sliced mushrooms and red bell pepper.

3. Add Add the black beans, and seasonings. Mix well and sauté allowing the flavors to meld.

4. After the potatoes are done, add them to the skillet along with the spinach, and gently mix to combine,
