I’ve been loving this Blueberry Toast lately. It’s sweet, tangy, and just the right amount of creamy with a little crunch. Whether you need a quick breakfast, an afternoon snack, or a simple dessert, this toast is always a hit. Plus, it’s super easy to make and feels like a little treat every time.

Ingredients

  • 4 slices whole grain bread
  • 1 cup fresh or frozen blueberries
  • 2 tablespoons date syrup or maple syrup
  • 1 teaspoon lemon juice
  • Pinch of salt
  • ½ cup plain unsweetened yogurt I used soy
  • Lemon zest
  • Dash of cinnamon optional
  • Basil leaves for garnish
  • Variation - drizzle of balsamic glaze or balsamic vinegar

Instructions

  • Toast the bread: Toast your whole grain bread slices until golden and crisp.

  • Prep the blueberries: Add blueberries, date syrup, lemon juice, and pinch of salt to a small saucepan over low heat. Warm for 3–5 minutes until juicy and slightly softened. You can mash lightly with a fork if you’d like a compote-style topping.

  • Assemble the toast: Spread a generous layer of soy yogurt on each slice of toast. Top with the warm blueberry topping.
    1/2 cup plain unsweetened yogurt
  • Finish it off: Sprinkle with cinnamon if using.
    Dash of cinnamon
  • Serve immediately while the toast is still crisp.

Notes

  • Add sliced banana under the yogurt for extra creaminess and natural sweetness.
