Variation - drizzle of balsamic glaze or balsamic vinegar
Instructions
Toast the bread: Toast your whole grain bread slices until golden and crisp.
4 slices whole grain bread
Prep the blueberries: Add blueberries, date syrup, lemon juice, and pinch of salt to a small saucepan over low heat. Warm for 3–5 minutes until juicy and slightly softened. You can mash lightly with a fork if you’d like a compote-style topping.
1 cup fresh or frozen blueberries, 2 tablespoons date syrup, 1 teaspoon lemon juice, Pinch of salt
Assemble the toast: Spread a generous layer of soy yogurt on each slice of toast. Top with the warm blueberry topping.
1/2 cup plain unsweetened yogurt
Finish it off: Sprinkle with cinnamon if using.
