Ingredients

  • 1 pound frozen green beans
  • 2 tablespoons olive oil optional*
  • 3 cloves garlic minced
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh lemon juice
  • ½ teaspoon dried thyme
  • ¼-½ teaspoon salt to taste
  • teaspoon black pepper to taste
  • 2 tablespoons chopped fresh parsley optional, for garnish

Instructions

  • In a large skillet or pan, heat olive oil over medium heat.
  • Add minced garlic and sauté for about 1-2 minutes until fragrant but not browned.
  • Stir in the green beans, lemon zest, lemon juice, dried thyme, salt, and pepper. Toss to coat the green beans evenly.
  • Cook on the stovetop for 10-15 minutes or until the green beans are tender-crisp, stirring occasionally.
  • Once cooked, remove the green beans from the heat. Garnish with chopped fresh parsley, if desired.

Notes

Leftovers: Allow to cool, then store in an airtight container in the refrigerator for up to a week.
*For an oil-free option you can sauté with vegetable broth or water instead.
