Piña Colada Mocktail

This Piña Colada Mocktail has all of the tropical goodness you're craving this summer. With pineapple and coconut flavors, this mocktail is thick, creamy, and so fun to drink, even without a drop of alcohol!

Ingredients

  • 1 cup frozen pineapple chunks
  • ½ cup canned coconut milk chilled (full fat or light)
  • ½ cup pineapple juice chilled
  • ½ lime juiced
  • ice cubes
  • 1 tablespoon agave syrup or maple syrup, optional

Instructions

  • In a blender, combine the frozen pineapple, coconut milk, pineapple juice, lime juice. Blend until smooth and frothy.
  • Taste the mocktail and adjust the sweetness by adding agave syrup (or maple syrup) if desired. For a thicker consistency, add ½ - 1 cup of ice. Blend again until smooth.
  • Pour the Piña Colada mocktail into the chilled glasses. Garnish each glass with a pineapple slice and a maraschino cherry.

Notes

Variations: For a creamier mocktail, you can use coconut cream instead of coconut milk. To make it a bit more indulgent, top each glass with a dollop of whipped coconut cream.
